I just downloaded and installed OBS Studio and I did a Test recording but the recording was only 8 seconds long and i recorded for about a minute.

You're encountering severe rendering and encoding lag. Your APU is very underpowered for what you're asking it to do. As a result, it's not getting a chance to write anything to the file, because it just doesn't exist in the encoding pipline.
Try reducing the recording framerate to 30fps, and changing to superfast or ultrafast for the x264 preset.
