Using windowed projector to play Switch games via capture card

Ok so I know this is probably an odd use case but here we go...

Basically I have my Nintendo Switch hooked up to an elgato HD60 S+, which is plugged into my laptop (MPB 16" running Windows, connected to an eGPU with an rtx2080 super inside), all hooked up to an ultrawide monitor. I'm simply trying to play my switch games on this monitor through the OBS projectors (so I can use my monitor for other things at the same time), but I can't seem to get the projectors working without any stuttering. The game looks like it's running at slightly lower than 60fps, but with a few, yet constant, stutters here and there which ruins the experience and makes me just end up changing my input over to HDMI. Note that latency isn't a huge concern here as I'm not playing anything competitive - I'm aware I'd need to play directly on HDMI if I cared about latency.

I'll also add that when actually streaming to Twitch, everything looks crisp and smooth, which makes me believe this isn't a hardware issue, especially as I'm simply just trying to view the output of the source.

Is this simply an issue with the projectors themselves being unoptimized? Or since the projectors aren't actually using the encoder, is it causing it to actually run worse? If so, is anyone aware of a program that could handle what I'm looking for?

Any help would be awesome!
