Using OBS with the Video Forever USB Interface

I am trying to help a neighbour transfer some VHS tapes to his PC. I have the basics working but the video is jerky!
I have tried changing recorded video quality and resolution settings but the problem remains.
Is it okay to upload about 20 secs of recorded video to show the problem?
