Question / Help Ultrawide Streaming - OBS FPS

I'm trying to get into streaming but running into issues preventing me from having a good experience.

I recently upgraded from an LG 2560x1080 60hz ultrawide to the AOC AG352UCG, a 3440x1440 100hz G-Sync'd beauty. Hoo boy. What an an upgrade.

Now, I can get my stream formatted correctly and looking good. That's not my problem.

My issue is my GTX 1080 is hitting 100% GPU usage at the 3440x1440 resolution. This is causing my stream to become quite choppy, since OBS Studio evidently needs at least 2-3% GPU usage to handle the overlays, webcam, and game footage. In OBS Studio I can see on the FPS monitor it is dropping from 60FPS all the way down to the teens sometimes. This isn't even when I am streaming.

I've poured over many threads looking for advice, and so many people say "turn down your settings" and "cap your framerate" so that you don't hit 100% GPU usage. My experience in the games I've been testing so far (Fortnite, PUBG, Heroes of the Storm) has been unless I drop the resolution, it still hits 100% GPU usage. Fortnite looks AWFUL if I turn down the settings. Seriously, I have to halve the resolution to not hit 100% GPU usage.

So I'm here asking for another solution. I hit max settings on games at the 3440x1440 resolution easily with good framerate. I don't want to sacrifice my game beauty for the sake of giving OBS Studio an extra 2-3% GPU usage to prevent framerate issues. I wish Windows would just split the usage between the two applications and slightly reduce my framerate in the game, but that isn't happening.

I've tried NDI and it still has this issue, since OBS Studio has to be open.

Would a separate streaming PC with a capture card solve this? How do capture cards handle ultrawide scenarios?

I'm willing to spend the money, just trying to find the right direction.
