To me, setting up OBS seems complex, particularly I have no idea what the weird screen with multiple receding images is all about. But let us leave that aside.
I have just recorded two Zoom conversations. The quality of both was excellent. When played back, the quality of the first was 'as was', but in the second the remote speaker had terrible echo. The OBS settings were exactly the same.

This is very worrying because it seems I just can't trust OBS to predictably generate acceptable quality recordings.
