Two Instances of OBS Running Question

I have been trying to sort out how to run 2 instances of OBS but have come away with a question or two.

It seems that I can run 2 OBS' but I am concerned that each copy will try to stream to Twitch, where I only need one copy to stream to Twitch with all the cool overlays, etc, and the second instance to record only the gameplay without all the extras.

I have watched multiple videos (one of which suggested setting up "portable" copies and I just can't seem to get it to work.

Guidance here would really be appreciated since Source Record doesn't work that well at this point...
 
1. Click "Download Zip" on https://obsproject.com/download
2. Extract it somewhere
3. Place a `portable_mode.txt` file in the main directory (alongside `bin/` and `obs-plugins/`
4. Open `bin/64bit/obs64.exe` to run your newly portable OBS installation

You can make as many of these as you like (extracted to different locations) and as long as the `portable_mode.txt` file is in the right location, each copy will be 100% isolated from the rest.
