Translate simple settings to advanced

After hours of researching YouTube for the best recording settings, I found this video: https://www.youtube.com/watch?v=wIrz4Vaaf8E
However, I want to be able to use advanced output mode so I can have multiple audio tracks.

Here are my settings from the log with the settings from the video:

Above settings was achieved from this:
Recording Quality: Indistinguishable Quality, Large File Size
Recording Format: mp4
Encoder: Hardware (NVENC)
Downscale Filter: Bicubic (Sharpened scaling, 16 samples)
Fractional FPS Value: 240/1
Process Priority: Above normal

Can someone explain how I should setup this in advanced mode please?
What encoder is this?

GPU: ASUS GeForce GTX 1080 Ti 11GB STRIX
RAM: G.Skill 16GB (2x8GB) DDR4 3000MHz CL15 Trident Z RGB
SSD: 2x Samsung 970 EVO 500GB
Monitor: Benq ZOWIE XL2546
Internet speed: 200/200

If you have any tips on optimal settings for me or any tips for upgrade I would love to hear that!
