Question / Help Trackpad taskbar trouble

On Mojave, 10.14.4, OBS 25.0.7 (64-bit).

I'm brand new to using OBS, so there's a lot I don't know yet. When running, there is an icon in the task bar at the top, that hides/displays the app. Clicking on that icon, a menu appears. *SOMETIMES*, the menu will stay up so that I can use it. More often, it appears for an instant, but disappears immediately. I've tried short taps and long presses, both soft and hard, and every key combo I can think of, but I can't get the menu to stay long enough to read/use. I tried disabling tapping in system preferences, but that didn't seem to change the behavior.

Is this a bug, a mis-setting, or are my expectations wrong?

I'm trying to use OBS to record myself talking with Google Slides run from the browser. Not yet quite sure how I got there, but putting Slides into presentation mode and recording, I then got stuck in a mode where I couldn't get OBS to come back at all.

I've set up a camera video source and placed it over the slides the way I want it to appear to the students. What's the correct order of clicks here, if I want to be able to see it exactly the way it's getting recorded?
1. start recording
2. put Slides in Presentation mode (takes the whole screen)
3. click at the top and put into Program or Preview mode?
4. blather incessantly while running slides...
5. now what? How do I get out of Slides presentation mode, and OBS Program or Preview mode, and stop the recording (ideally, last item first)?
