Question / Help Stuttering in OBS preview and in recording..........please help

I hope I can find some one able to help.
I have been using OBS for a few years on a one PC setup, changed to a two PC setup about a year ago and all was fine until i got a damn ultra-wide (3440x1440) monitor to game on.
Now recording with OBS has become a lot more difficult.

My gaming PC is
i9 9900k
RTX 2080 ti FE
32 GB 3200 ram
all SSD's

My recording PC
i7 7700k
GTX 1060
16GB ram
Recording to an SSD
with Elgato 4k60 pro as the capture card

And my problem
I have a very smooth running game ( Kingdom come Deliverance, but the problem is not limited to just this game) and never had a problem recording before the ultra-wide.
But now I get lots of little stutters throughout my recordings, sometimes not so much but most of the time it is very noticeable.
I have tried so many things over the last week I just cant remember them all, but my setup now is,
1, I have my gaming PC connected to my 3440x1440 monitor via Displayport.
2, I then have my Elgato in my recording PC, connected to my gaming PC GPU via HDMI, the HDMI is a high speed cable.
3, I have tried many refresh rates with my two monitors, but for now they are both set to 60hz, (in Nvidia control), 120hz on both and it sort of works but little point I get 70-100 fps and not a noticeably worse experience on a stable 60 fps 60hz.
4, And my Elgato 4k60 pro is cloned/duplicated with my gaming monitor, and both set to 60hz 3440x1400
5, I have played about with Nvidia control panel settings, I don't have FAST vertical sync on but I have had much better results with this game when I allow it to control V sync, and I get no tearing in game or recording. And I also have G sync on my gaming monitor and my recording monitor and it has never given me a problem.
6, I never get rendering or encoding lad, and I have tried all recording formats at the moment set for CQP.
7, I have my log from my last recording attempt and the problem was still happening.
8, I am uploading a video to my YouTube channel and will link it later but not sure if it will be done tonight, so might link it in the morning.
9, I have tried many different ways to setup my Elgato as a video capture device, still not sure if its set right.

Any help would be great, it is getting late here but i will stick around until early morning, then will be back online in the morning,

Not sure if the Log is what you wanted but it is the log i get when i ask to upload last log file in OBS, but it reads differently to when i open the last log in my folder
