Stuttering/Choppy Audio Recording

Here's my setup:

Processor Intel(R) Core(TM) i7-8565U CPU @ 1.80GHz 1.99 GHz
Installed RAM 16.0 GB (15.8 GB usable)
System type 64-bit operating system, x64-based processor

I have 3 shure performance microphones with XLR cords connected to a Behringer Xenyx1002B Mixer - monitored directly here sounds fine
that is connected via RCA to aux cord to my computer

Canon 5D Mark IV connected through HDMI to an El Gato Camlink 4K to my computer - this is the scene where the audio is failing

Canon Rebel T6i connected through mini usb to Canon Webcam extension software

Occassionally, we will also add in zoom conversations as a source through Window Capture and adding Desktop Audio source, when not in use these are muted.

Finally I have an HDMI cord connecting my computer to a TV and then an Sterling 8-channel audio headphone rack for monitoring - again sounds fine here

However the OBS recording has crackly stuttering audio that is unusable. I have found that if I remove the Sterling 8-channel audio headphone rack, the problem is not an issue anymore, which is fine for in-person interviews where monitoring isn't necessary. But if I do that, I need a new way to allow my hosts to monitor zoom interview feeds.

Any ideas what I can do to fix this?
