I am at a loss on this one. I am using Linux Mint, and the sound source sounds fine when being monitorered. Even whilst the issue is occurring.
So the hardware side... the audio device is a behringer UMC404HD audio device, with 4 channels in. Theres 4 audio inputs, 2 XLR and 2 JACK into that device (L/R Mixed Audio and L/R Mic input respectively). it connects to the PC via USB 2.
The problem occurring is that the Mixed audio channels are stuttering inside of OBS.... but ONLY when recording or streaming is occurring. If i use pipewire's QPWGraph and connect headphones up to the monitor of the same audio source that is stuttering, or to the source directly, then the audio plays back absolutely fine.
But on recording it is stuttering and sounds horrible. But here's the weird thing.... like I said before... the device has 2x audio and 2x microphone audio channels going into it, the microphone channels are absolutely fine and unaffected.
Using QPWGraph, i plugged the input of all 4 channels into monitoring headphones, and there was no stutter. There is also no stutter if I plug the headphones into that OBS Sound Source's monitor of the channels. The stutter is simply and only happening inside of OBS, at the point in which audio is being recorded, it makes pretty much zero sense to me.
Happens in NVenc and x264.
Two log files and some evidence of it happening:

A routing graph from QPWGraph.... The MIXED AUDIO is the source that is stuttering. As you see below, monitor of the front L/R sources (the 2 channels fo mixed audio) are coming out to the XONAR headphones (monitoring headphones). Whilst this screenshot was taken a recording of the stuttering was made. The monitoring headphones did NOT have the stuttering, but the recording did.
