Question / Help Struggling to Find Source of Encoding Lag

I haven't used OBS in months (it's been a busy summer), but I posted in the forums when I started using OBS regarding encoding lag that I cannot seem to be rid of. I used to record at 1080p/60fps, but at the suggestion of a forum poster dropped my resolution down to 720p. This hasn't seemed to make any difference in the amount of frames I lose to encoding lag. I also worked my way through all the codecs when troubleshooting months ago, but never managed to get the problem fixed.

I'm ready to start the troubleshooting again, even if it means starting the process over again. I'd ideally like to get my resolution back to 1080p at 60fps as I believe my CPU and GPUs are strong enough to handle it (never have any stuttering in ShadowPlay, even when capturing with both it and OBS at the same time. This isn't what I do normally, but I was trying it as a work around so I could isolate audio tracks and also have video without missing frames. The log file provided only has OBS, VLC, and the game running simultaneously)

Any guidance would be greatly appreciated. Love the program, but this has been a sticking point for me.
