Question / Help Streaming 7 cameras parallel

Hi all,
I want to stream 7 cameras at the same time. Meaning I have a website and users should be able to select between 7 cameras that are streaming live content.
One of the cameras is always seen and then you can click on different views. As far as I understood it´s not possible with OBS to have different Outputs to different streams. I´m working on Mac OSX and I fund out that it´s possible to just duplicate OBS and run different instances of it. Problem besides the high CPU usage is that if I quit alll instances and open them again they all come up with the same settings. I guess it´s because on Mac OBS is saving the last state in a system folder. So I have to reconfigure each instance of OBS every time I restart it? Is there a better way to do this? Or a better way to stream 7 videos ?

OBS really isn't made to do this. All instances are going to use the same settings because it wasn't designed to be run in multiple instances with different settings. The only way to do it really would be to set up seven user accounts; then each instance running could have separate settings, but I honestly don't know if running instances of OBS in a user account that is logged in but not frontmost would be able to function properly.

OBS can do a lot but I don't really think it's made for this use case. Even if you could, you almost certainly would run into CPU and GPU bottlenecks unless each feed was pretty small framesize, low framerate.

So basically it means I should use several computers to run several streams? So maybe 3 computers for 7 streams. I think about running it with windows now. I think its easier to get real independent instances under win cause all files are written in the program folder.
