Strange performance loss on a specific game.

Well, let's get started with hardware.
GPU is an RTX 3050 (8GB)
CPU is an I9-9900K 4.8 Hz if i'm not mistaken.
RAM are two 8GB Kingstom Fury 3000 MHz (if i'm not mistaken)
MoBo i really don't remember the specific right now.
PSU is a XPG Core Reactor 750 if i'm not mistaken.
Two monitors, one 1080p 144Hz that's my main monitor and a second TV 1080p 60Hz.
Think that's all relevant hardware.
For internet, i've got a stable connection of a 30~35 MB Upload 350~400 MB DL.
Streaming plataform is twitch, and i allow OBS to select the best server for me.

Situations i faced.
Streamed League of Legends, 4 hours straight, all high settings, no dropped frame, no framerate issues.
Streamed Dwarf Fortress, same thing (but come on, it's DF)
Streamed Rimworld, same thing as above, no frame rate drop, no problems.
Streamed Mount and Blade Bannerlord, All high options, no droppedframes, no stuttering.
But for some god damn reason, Potionomics, a game with barely no graphics, drops frames like crazy. To the point it's impossible for my viewers to watch it.
I've seen people streaming it, so there must be a way, i've seen people with worse hardware than mine stream it, so something is wrong with my OBS setup?
During the stream there were an error message on OBS saying "Encoding Overloaded" or something like that. But the CPU usage on OBS was less than 8%!
Are you saying that a game withtout barely any graphics is eating up 8 GB of VRAM?
Or did i set up something wrongly?

Please folks, i'm desperate to keep this let's play but, it's just impossible with how stuttering it is for the viewers.
And worse, it seems that, if i click away from the game and click on OBS, the stuttering seem to stop!
Any idea of what could it be? Maybe something with the dual monitors?
