I have been using the same exact settings as before and it had worked perfectly fine, however whenever I changed my settings to using 2 audio tracks and 360fps recording, all of a sudden it would let me end the recording and it just sits at "stopping recording" What could I possibly do to fix this issued.

Recording at above 60fps is not supported, and purely at-your-own-risk. Try swapping back to 60fps and see if the issue persists.
This is a somewhat common issue as some Minecraft idiot on YouTube keeps telling newbies to record at ridiculously high framerates.
