Starting and Stopping

I have just installed the application intending to create videos of my display actions.
However it seems the program can only be started or stopped with the OBS window visible.
Therefore the OBS window is included at the beginning and end of a video.
I was expecting to have keyboard shortcuts available to start/stop.

I am missing something or doing something wrong?

Yes to missing something, no you did nothing wrong (other than maybe your expectations that the software was preset for the use case you have with a single monitor).
As noted, you can set up hotkeys. Personally, I'd have no use for them, and they'd only get in my way. So I appreciate OBS team NOT setting up such by default.

OBS is designed as an interactive compositing tool. And you are using OBS differently (though common). So, the one to adjust will be you. Hotkeys are one way. Some folks get something like a StreamDeck (a USB connected external device with buttons you can program for specific actions), or simply connect a 2nd monitor (granted not practical in all scenarios). And there are other ways as well.
For example, as you mentioned creating videos (So recording, not streaming) simply starting recording with OBS visible, hide OBS, do your thing and make OBS active when done to stop recording., Then simply trim the ends of the video (using a tool that doesn't re-encode and cause video quality loss, there are free options, and process would be really quick)

You can set your own hotkey combination. This is really fangb. But be careful not to conflict with the hotkeys of other programs on your computer.

It's possible you're having the same problem as I once had when trying to use hotkeys in OBS but I may be interpreting your message differently.
If you go to this thread and read post #6, you might understand how administrator rights work with this software.
Once you read that, go here and follow the directions in post #2.

Once I did that, I can run OBS minimized and switch monitors using hotkeys, I set up hot keys to start recording, stop recording, pause, etc...
