I'm wondering if there's any way for OBS Studio to "target" the Game Capture for a local recording whilst also leaving my overlays and alerts present for the livestream.
No, if the other overlays are conflicting with the OBS game capture hook your only real alternative is to run in borderless mode and use window capture instead.
