Question / Help Sony A7s11 capture ?

If Sony provides a standard video class device driver that provides a clean input under MacOS, then yes. You could find this out by asking Sony support about it, or just by plugging the camera in to your Mac and trying to use it as a camera input for FaceTime. If FaceTime can see it, then OBS will as well. If not, then it won't.
If not, you would need an HDMI capture device (those from Magewell, BlackMagic and AJA are known to work well with OBS under MacOS) and clean HDMI output from the camera, if it provides that as an option. That would again be a question for Sony documentation or support.
