On the videos that I record using OBS Studio, after I've finished recording, the videos skip a beat every few seconds. To clarify, the video skips a beat, the audio flows just fine.

Can you post one with a recording session? Look for a log that says Recording Start or something like that.

You need to give your GPU more headroom. Try reducing settings in-game or capping your frame rate.
