So here is my setup and dilema:

I have a great gaming computer with a Geforce RTX 2080 TI Graphics card.
I have two Alienware 25" monitors
32" Smart tv"
Xbox one s
Switch
Blue Yeti mic
Elgato capture card and Stream deck
Logitech c922x and brio cameras
Roku Ulta
PC speakers

So my setup part 2:

1. my xbox one s and Nintendo Switch are connected to a port port usb hdmi switcher
2. HDMI switcher connected to Elgato Capture card.
3. Capture card connected to cpu through USB
4. capture card plugged into a HDMI Splitter
5. Roku Ultra plugged into HDMI Splitter
6. HDMI splitter connected to 32' TV
7. TV connected back to tv from tv HDMI port to cpu Display port.
8. Blue Yeti Mic hooked up to usb port

This way tv can be used for both gaming and pc monitor.

Audio help:

I think to get the gaming audio/pc audio for my streaming/ and mic audio through a headset..
Think I need a mixer, but wouldn't know which one or the setup of that...
Think I can

1. Connect Elgato Capture Card 3.5mm to cpu, think line in that would send to cpu and headset plugged into pc would work right?
 
Unfortunately, it's not clear what you want to achieve. Additionally, your last (and probably most important) question is incomprehensible. You seem to use google translate or some other machine translator, and its output is incomprehensible. Write full, simple, short sentences. Don't write partial sentences split into topic lists, because a translator isn't able to handle this well.

A better approach to a good question is to describe what you want to achieve. Omit the details for that most important question. First, describe what you want to achieve (without too much details). Then describe what you tried to do (with details), then describe what your issues are (with details), and finally describe your setup. You did the the last thing, but you failed to describe the other vital parts of a good support question. And don't ask what will happen if you do this or that.
 
I think I made perfect sense here. For one thing I have described my complete setup and I will here again. I have explained how I have to hook up video parts, but was having a question on making sure I had the audio correct.

So here we go...my setup

I have a high end gaming pc with 32 gb ram and an Geforce RTX 2080 TI graphics card.
One elgato hd 60 capture card
One elgato stream deck
One blue yeti blackout edition mic
Two 25" 240hz Alienware monitors
32" 1080p tv
Xbox one s
Nintendo switch
Roku ultra
USB hub
Hdmi switcher
Hdmi splitter
Logitech c922x and logitech brio webcams
Computer speakers with subwoofer
Headphones

Ok so what I'm planning on doing is hooking both the xbox and switch to the hdmi switcher and then the hdmi switcher into the elgato capture card.

Next I have to hook the capture card to my computer via usb and also to an hdmi splitter, which will also have a roku hooked up. The hdmi splitter will then connect to my 32"tv via hdmi.

The tv will then also be connected to my computer via displayport.

My other two monitors will then be hooked up to the computer via hdmi.

Now my mic is hooked up via USB and headphones are plugged into my pc.

This part I got, but when it comes to setting up to record a video for YouTube, not live, I want to be able to hear my game audio, my pc for my notifications, and my mic all three through my.headset.

That is what I need help with.
