Question / Help Setting low FPS for Speed-up painting

So maybe I am doing something wrong. Let's start with what I am trying to achieve.

I want to record videos while I make digital painting. A single painting can take me a few hours, depending. Then, after recording I usually speed it up, so what it takes 8 hours of work can be seen in a single video of 4 minutes. Pretty simple.

As you can Imagine, it has no sense to record at 60fps if later I am going to speed it up.

My intention is to record 1 frame per second, so after recording 1 minute, you will have just 60 frames, and when playing it at 60fps that minute of recording will be last just 1 second.

The thing is that on Video settings, I entered a "Integer FPS Value" of 1fps and OBS doesn't record anything, just the very first frame frozen. With a value of 5fps it works, but instead of recording in actual 5fps, OBS is still recording at 60fps, the final video is still last the same amount of time I've been recording, but changing the frame after 10 seconds or so, meanwhile the video seems frozen, because it keeps the same frame, which seems pretty strange.

I am using OBS 19.0.3 (64bit) on Windows 7 SP2 64bit.
