Hi,
Basically when recording games with 2 audio tracks (1 for mic, 1 for the rest), the mic audio is ok but the desktop sound (the game in this case) sounds with a slight echo with almost no delay that makes the game sound a bit metallic (video below), you can easily spot it with the high sounds.
here are my specs:
Gigabyte Aorus GA-Z370 Gaming 7
Intel Core i7-8700K @4.6GHz
Kingston HyperX Fury DDR4 2133 PC4-17000 16GB 2X8GB CL14
And here are my OBS settings:

option 2.png
option 3.png
option 4.png
option 5.png
option 6.png
option 7.png

Finally, here is a video where it sounds normal vs my recording:

I overcame this problem by recording the desktop in mono. All attempts to record internally in stereo resulted in the same result (slight echo with almost no delay that makes the game sound a bit metallic) that you had, regardless of my settings. Although I recorded internally in mono, playback of the recording was delivered in stereo. I am on a mac and running soundflower.
