Question / Help Recordings freezing if game isn't capped at 60fps

I have had a weird problem with either OBS, games that I try to record, GPU or monitor. So I usually record in 60fps 1080p in OBS (studio and classic) and the footage lags, freezes and is just impossible to watch and enjoy. But this only happens if the game isn't capped at 60fps. If the game stays in 60 the recording is fine but if it goes over it starts freezing. The game itself when I play it doesn't lag most of the time but the recording does. I recorded about 2 hours of Alien Isolation one day and when I went back to look at it, about every a few seconds the screen froze for minutes at a time but the sound was fine... I've lost 2 long recording sessions because of this and had to struggle with it a ton when I've tried to stream. What could be causing this?

I didn't used to have any problems with my old laptop and OBS classic but now with my new desktop pc these problems have started to happen...

If it helps, I have a Gigabyte GTX 1070, i5 7600K, 16GB DDR-4 ram, my monitor is probably a few years old 1080p gaming ish monitor. OBS doesn't give the high cpu usage warning so I doubt its happening cause of that and I don't run anything else than the game and OBS just to make sure it runs a bit better.
