Recording stuttery after some time. Confusing

FPS: 60 (using VSync and 60 FPS in OBS)

When recording it starts fine for about 5 minutes and will slow down but pick back up right after and will happen at random intervals. I've done 1 hour recordings multiple times and each has the same short slow down.
