Question / Help Recording stutter when below target FPS?

I'm not sure what's going on here. I was testing OBS on Minecraft to see how it would fare recording on my PC, and most of the time it was good, though now and then the frame rate would drop below 60.

Watching the video I recorded afterwards was very strange. Every time my frame rate dropped even slightly below 60 fps the video would sort of stutter and jump back. The kid in this video has the same stuttering in his video: https://www.youtube.com/watch?v=Kkcp-YTvPtQ

Now I could set my frame rate to a safe number of, say, 30 or 40, but that wouldn't really fix the problem, just sort of avoid it. And besides, most of the time my PC does run at over 60 fps on games like Minecraft, so the jumping screen every so often just sort of ruins it.

I've tested Dxtory, which straight out just didn't work; it recorded a black screen and nothing else. Then I tried Bandicam, which seemed to work fine... So I'm not entirely sure. Any ideas?

I think OBS seems to be one of the best free solutions, so it would be really great if I could get it working. Does anybody have any tips as to how I may fix this? I've been searching for ages. Cheers!
