Question / Help Recording RCA output with OBS?

Could I record RCA video/audio output by running it through a converter that's plugged into my computer's USB slot? If so, how should I configure it for the best video quality?

I have 4 rca devices (n64, dreamcast, ps2, wii) that are plugged into a rca switch, that then runs to an hdmi up scaler, that then runs through a splitter to my tv and my camlink. audio and video can be captured with camlink through obs as a video capture device and audio input source
