Question / Help recording multiple screens on separate files for each?

hi OBS friends,

been recently using OBS and trying to grasp it a little more technically, however still heaps new to the world.
(couldn't find a newbie intro/thread or anything if that exists? to say hi)

been playing games recently along with some stream captures and am wondering;
is there a possible way to have the game record to one file, while the stream records to another?
or even run two instances of OBS at the same time and get them to record separate instances(window capture + game capture)?

or is my only way to do it to extend canvas size to fit both screens and have them cropped to fit and still record off the 1 file, < which is what i've currently been doing.

any feedback would be appreciated

just to make sure we're clear, you are broadcasting to <streaming service> and would like to have the stream recording saved to one file, and a crisp, clean copy of JUST the game video recorded to another file?

apologies i was not clear on the explanation,
been playing games like pubg, ark, vermintide 2 beta, multiplayer co-op etc while friends have been streaming online(streaming service) that i normally have playing on another screen while i am in the game myself, to see their player perspectives or to easily keep track of location and positioning for the games.

which brings me to the; would like save my own gameplay onto one file and also save their gameplay onto another so that i may be able to edit and blend the two together in post processing from differing angles.

*the audio doesn't matter as team chat plays the same thing and wouldn't need to edit that anyway.
however was hoping to get edits on the some matches but from multiple perspectives, etc.
