Question / Help Recording Minecraft - Video Stutters, no in-game frame drops

I am trying to get back into YouTube and record videos. My main PC settings are as follows (if anything else is needed, let me know):

CPU: Intel Core i5-4590 3.3GHz Quad-Core Processor
Video Card: XFX Radeon R9 280X 3GB Double Dissipation
Memory: G.Skill Sniper Series 8GB (2 x 4GB) DDR3-1866 Memory

My game doesn't take an FPS hit and OBS doesn't appear to drop frames when I record, but when I view the outputted video, it stutters, plays for about 2 seconds, stutters, repeat, etc etc.

I ideally want to record in 1080p60, but 720p60 will suffice if it means I can record smoothly with decent quality.

I just want to record videos that do not have lag stutters. I feel like my PC is good enough. What is the issue?

I upped my recording size to 1080p, changed bitrate to 45,000, and changed cpu uasge preset to veryfast, seems to be working better. Any better suggestions?

You have an AMD gpu, you could use the Hardware encoder and further reduce the CPU load from encoding. That is all I can suggest.

Select Hardware (AMD) in the simple output mode or "H264 Encoder (AMD Advanced Media Framework)" if you are using advanced output mode.

Thank you for the help. This worked tremendously for other games, but Minecraft still lags and is jagged. I guess I'll have to go with Fraps or something else.
