Recorded video output is 'faded' compared to windows output

I've recently picked up a new M1 MBP for the family and have been using it to record various projects. I've been using OBS in particular to record gameplay with a buddy of mine, who is recording on his Windows laptop. We spent time syncing our settings in the game as well as within OBS to ensure that the output on both is as close as possible when working on them in Premier Pro. However, we've come across something that I can't seem to find much about online.

My video output appears faded, almost like there's a browning tint to it. This isn't the case when we're actually in game, as I am playing the game on my PC and capturing using an Elgado HD60 S+. I do this to 1) give me more ability to push my PC in terms of performance and 2) host the game with other players without losing performance due to simultaneous recording. Honestly, everything about that experience using the M1 MBP to capture the video from the PC has been great but once they are side by side, you can see the difference. I've attached a couple of clippings to show what I mean. The images are from the same point in time in the game but different viewpoints.

I'm also attaching a screen clip of my OBS recording settings. The only thing that I've could think to change about this would be changing the video encoder to h264_videotoolbox but that option actually has libx264 in parenthesis beside it so I'm not sure if that's the same thing or not.

I'm really not sure which question to ask, lol! Is this a known Mac issue? Is this something that I have set up incorrectly in OBS recording settings or is it just a byproduct of the support status for OBS and M1 Macs right now?
