Recorded Video Frame Drops - Stuttering - Suddenly

Hello everyone,

I have loved getting to learn OBS, watching guides, talking to streamers to optimize settings etc.

I thought that I had found the holy grail for my recording quality yesterday. But today, playing through Elden Ring, whenever I turned on 'start recording', when I alt-tabbed back to OBS it'd show 'skipped frames due to encoding lag' where that number has been near zero as far as I know.

So now that I'm encoding videos tonight I am dealing with very choppy content, which is awful. I have attached the log file for the session to this, and am honestly at my wit's end, because I can't figure out why this happened.

Is there anything in these logs that would explain why recording was so borked today? If not, I'm worried I have a hardware issue.

Both were recorded, as far as I can recall, with identical settings. The first video is much more choppy.

I tested the recording today and tweaked some settings, but it still isn't that smooth.

I have a 5950X, 3090 Strix, and I don't think I should have any problems recording (to an SSD) 1440p in very high quality. Any ideas, based on the log above? I parsed it myself and don't actually see that many failed frame renders under the recording parts, but I'm new to these recordings and OBS so...grateful for any help!
