Record another screen other than the one I'm using

How are you sourcing your screen?
If you are trying to using another active screen on your computer, you will need to add a source using "display capture", and select the display you want to show.
If you are using a capture device, such as a elgato hd60, youll need to add a source using "capture device"
If you are attempting to just display a specific game screen or window you need to ad a source using "window capture" and select your window from there.

Sadly It only allows me to select one screen, but I want to select another screen other than the one I'm seeing with my eyes, do you understand me?

If your card, has multiple outputs, you'd need to connect something to the output in order to have it activated and as an option. If you don't have a second monitor to activate it. They do sell "dummy" HDMI adapters for a few bucks which trick your card into thinking something is connected.
I only have one screen, which is the one on the laptop, but I open several tabs in my browser, I want to select, for example, the one on YouTube, and I use the one on Facebook and record the one on YouTube, do you understand me? Thank you.

If u are just trying to capture a tab/window then you can use window source, and select the tab from the list there.
You can also add a browser source and use that for YouTube and just use Facebook as you would on your regular browser.
