Recommendation: What can a Mac Mini M2 (not pro) 8GB handle?

I'm at a church looking to accomplish the following:
Live streaming:
- Audio input capture
- Video input capture (display computer)
- NDI cameras (anywhere from 1 to 3)

Also, I'd like to send a copy of what is being live streamed to another NDI source on a TV in our building

Can the Mac Mini M2 8GB handle that?

I'm doing all of that except the NDI output on an M1 MacBook Pro with 8GB, and have absolutely no performance issues. I'm streaming to YouTube at 5000 kbps (HD resolution, 30 fps) with CPU around 16% and no dropped frames. Running Keynote for slide graphics within the stream on the same machine. An M2 should be fine, though you can never go wrong with more RAM.
