Question / Help Random choppy video output

Alright, I'm a noob at OBS and I have been experiencing a problem. When recording videos in 4K, the game never actually lags but the actual video has lag spikes when being previewed.

At the beginning of the video there is no lag, and there is little-to-no lag when recording through most of the video, but at this part here you can clearly see lag. The thing is, I did not see the lag in the game. I have suspicions to why this is caused. I think the main reason is that since I am recording at 4K 60 FPS, OBS doesn't have enough time to write the actual data to the file in time before the next frame happens thus causing the lag. I can't say for sure that this is the reason, it's just a guess. Do you think there might be any other reason that is causing the lag? Here are my computer specs and OBS recording settings:

Ram: 32GB
CPU: Intel i7-6700K @4.0GHz, 8 cores
GPU: GTX 1080
Memory: 250GB SSD, 1.8TB HDD

Output is not rescaled, it is at the monitors default resolution of 3840x2160

I know what simple output mode is, but what do you mean by "indistinguishable recording quality software low cpu use encoder"?
