Is there a way to edit recordings using OBS? If so, how?

Not that I'm aware of. OBS composites (helps compile/create the recording, it isn't a video editor)
There are multiple recording output format options (each with own Pro's & Con's). You'll see common suggestion is to record to MKV
Then you'll want a video editor, and there are lots of free and pay options, just depends on how sophisticated your needs are as to which might suit you better. As you are using free OBS s/w, doing a Internet search on free video editors will give you a number of articles/videos on options

OBS is not a video editor. Editing will not be added, as it is outside the scope of what OBS is intended to cover.
There are plenty of free NLE suites out there, but all of them will require a lot of learning on how to use properly. DaVinci Resolve is a popular option (as is Blender), and Vegas comes up on Humble Bundle now and then for a paid option.
