Question / Help Quality is always just a little off. Please help.

Hey guys I'm new to screen recording and really the PC world in general so bear with me. I have been using OBS Studio for maybe 2 weeks now and after watching 25+ videos and looking over many forums I have reached the best quality I have seen on my recordings so far. In every recording I make the color is always a little bit off and the overall quality of the recording appears to be lower, the color is my main fix here. I also experience lag but I think I know how to fix that... So please help, I will post a log of what's going on and my settings feel to be the accumulate of the 25+ tutorials and my own trial and error. I am learning as I go so I will surely have many things wrong. Thanks for your patience and I hope you can help.

And as you may see on my log, my computer is running out of memory due to my steam games, I am getting another hard drive tomorrow so that won't be an issue.

Forgot to mention, if it applies my preview screen looks perfect while my recordings suffer, I would assume this has to do with the encoding but please correct me if I'm wrong.
