PS5 Gameplay choppy on Mac Studio

Hi, I am trying to record a walkthrough for a game on Ps5 and my footage always looks choppy no matter the settings i change.

My set up:
Ps5 connected to Mac Studio via Elgato 4K capture card with HDMI 2.1 cables.
Mac Studio - Apple M1 Max with 10-core CPU, 32-core GPU, 16-core Neural Engine

My recording options using MP4 as format are
AOM AV1
Apple VT H264 Hardware Encoder
Apple VT H264 Software Encoder
Apple VT HEVC Hardware Encoder
Apple VT HEVC Software Encoder
x264

I have my rate control as CBR and bitrate as 25000 kbps
profle is high (not sure what this means to be honest)

any advice or help would be much appreciated as I really want to capture my gameplay footage in the best way i can for my youtube channel.

I've had no end of trouble trying to get an Elgato CamLink 4K to work with OBS on Mac. Worked fine in Windows. Got to the point I bought a cheap HDMI in from eBay (jpeg stream nonsense, iirc) and that got me smooth footage at a quality I'll just have to live with. (It's actually totally okay quality in FHD, but nothing exceptional.)

The big issue with that dongle is latency – I don't recall it piping audio, so syncing audio is a headache.
