I'm not on a laptop though.You're on a laptop. You have to set OBS to run on the integrated grpahics to use Display Capture, due to how laptops work (one more reason they are not recommended for streaming). Follow the steps in the link below, but be aware that this will DISABLE Game and Window Captures:

Also a note, Display Capture is the LEAST performant capture method, and should be avoided at all costs, if a Game or Window Capture can be used instead.
Interesting; your logfile shows two GPUs, one Intel Integrated. Please note that AIO monitor-computers essentially are just laptops without a keyboard. If you are NOT on an AIO, make sure you have NO monitors plugged into the motherboard I/O shield, and that ALL of them are connected to your discrete GPU. If they aren't, it can cause major problems.I'm not on a laptop though.

Try right-clicking the source in the Sources list, going to Transforms, then Reset Transform. Then go to the same submenu and Fit to Screen. Sometimes sources can be created outside the visible canvas area, and this will get them back.
