In the profiles OBS only store settings, not the scene collection. This is why you have separated menus for each.
Using only OBS you can't record both at the same time unless you use two separate installations of OBS (portable) with each OBS instance recording a different monitor.
There are some plugins that allows you to record separately sources and/or scenes, like source record or branch out. This way you only use one OBS installation. You should read all about how they work and ask any question about it within the discussion section on the particular plugin page you choose to use.
Do not install both at the same times.
