Preview capture device at 60 fps, stream at 30 fps

Hey there
I'm using a chinaware capture card to get a PS2 picture on my PC screen and record/stream using OBS Studio. Back in the OBS Classic days I'd use AmarecTV to tap into the capture card for proper de-interlacing, but now with OBS Studio I thought I could simply skip Amarec and let OBS handle the capture part.

The problem I'm facing with this is the fps though. The preview (which I also use to play - no component capable monitor nearby) is being limited to the video encoding FPS. I'm assuming this is by design, but is there any way to still enjoy the game at 60 fps de-interlaced while streaming/recording at 30? Boosting stream fps to 60 seems like a bad choice if I want to keep my bitrate low/quality high and I'd prefer to not go back to using AmarecTV.

I'm thankful for any suggestions :D
