Overloading suddenly, apparently out of nowhere

Good day all

I've been digitizing my folks old VHS home videos using my 2015 Macbook Pro, VCR, OBS and this capture card:

https://www.amazon.ca/gp/product/B09HBZDXGT/ref=ppx_yo_dt_b_asin_title_o00_s00?ie=UTF8&psc=1

Everything was going really well considering this is all my first attempt and I have zero experience with OBS or any kind of video editing. I managed to record a few tapes, convert them to mp4 and was very happy with the quality.

I haven't been able to record in over a month now, I just started again today but I've run into a very weird problem. OBS is telling me it's overloading, CPU usage is at around 60%. When I remux the recording I have sound but the video image has become stretched horizontally and reduced veritcally so the image is completely distorted.

Some quick searching has told me to reduce resolution and settings, although this doesn't seem to have make any difference. Storage space is said to be another potential cause of overloading but I actually have more than I did before because I got rid of dualboot in the month between recordings. I've even gone back and tried making some recordings of the tapes I've already done successfully and am getting the same distorted result. All of the settings are set to default, the same as before. I'm not running any other programs in the background, not even Safari. I'm at a loss here.
