Question / Help Overlays and RAW Video Files

Hello all. I've just been doing basic streaming direct from my Xbox One console by way of the Twitch app....but now I'm moving onto PC streaming and using OBS. The question I have is....how does one stream with overlays, but also have raw video files that don't have overlays plastered all over them? My goal is to stream with all that comes with OBS, overlays, alerts, etc...but I also want to make videos of said stream, minus all the extra stuff as seen in a stream. How do I go about this? What is your setup in achieving this?
