That depends if you're streaming to YouTube directly or if you're recording a movie to upload later. If you're recording, you can record just about anything and then edit or re-encode it later.

For streaming, read this. For recording, read this guide.

I highly recommend leaving the Output Mode at Simple.

You should record to FLV because it's a safer file format. YouTube will accept FLVs for upload directly, but you can use OBS Studio to remux your FLVs to MP4s if you prefer (File > Remux Recordings). If you need MP4 files for editing software, you can also use remux for that.
