I've had this problem before when I was using OBS on Catalina and I found that I couldn't trim/crop the display source. If I would then quicktime wouldn't be able to save a file after it was trimmed.
Now I got a new laptop which is running Mojave. I'm encountering the same issue but nothing seems to fix it. I've used the autoconfig wizard, changed sources, changes outputs, changed encoders.
Quicktime can still save their own screencasts so I'm pretty sure that's not it.
