You're recording 5 audio tracks, except track 1.
Then you're rutting audio to only 3 tracks. Everything in track 1 for the streaming, desktop and game on track 2 and discord and mic on track 3.
You may want to separate the 4 tracks you need to record one per track. So game to track 2, mic to track 3, discord to track 4 and desktop to track 5. This would take only 4 tracks.
You can still record track 1 to have it as reference in case you need it.
Of course, you need a video editor that can handle multiple audio files, such as Davinci Resolve
