The OBS Window is completely resizeable however as far as I can tell the width has to big enough to fit in the scenes sources mixer etc panes underneath the preview. So I am not sure what you are after to be honest? The Window does not have to be the same size as your base canvas if that is your concern you can just shrink the window and the base canvas will effectively stay the same size as far as OBS is concerned.
Seriously though as far as I am aware there is no way to shuffle the panes underneath so that they are in a different order or not visible. It actually might be a nice feature to have but it's probably not high up on the list of things the devs want to change :-)
I'm a little confused to be honest, if you have an ultrawide monitor wouldn't you want to make things bigger? Anyway like I say I'm not aware of a way to make it smaller.
My monitor has a resolution of 2560x1080p - This means if I play a game in windowed mode 1920x1080p i just have 640p in width for OBS. The fixed width of the obs window is like 750px, and this is my problem :)
