Where does OBS Studio create recorded files before moving them to output folder specified by user?

There needs to be some temporary folder. Because file never shows unless I've succesfully stopped recording (normal obs created file right away but Studio doesn't do that)

No there doesn't.
If you're not getting your files finalized properly you either have a problem with your settings or a problem with your system.

I think I'm with JFlint.... At least on PC. I've tested some recordings.. and I'm watching the folder where the writing is taking place. Nothing is there, then BAM, a 256Mb file appears when I stop recording.

I guess I'm also wondering, what happens if you record for 4 hours straight? Will it suddenly show up with a 15Gb file suddenly? It must be writing somewhere I'm thinking, or using ram, then dumping it I suppose? I'll try a 1 hour - 2 hour recording to see what happens.

Did a several hour recording, and the file just popped up in the folder that you set. I'm sure there's some sort of temporary cache or something somewhere... Just have to find out where.
