Are the command line parameters from the old obs like -profile in obs studio as well?

For OBS Studio, --collection [scene collection name], --profile [profile name], --scene [scene name], --startstreaming, --startrecording. If a collection/profile/scene has a space in the name, use quotes around the full name. For portable mode, read http://github.com/jp9000/obs-studio/releases/tag/0.11.1

No. But you can assign hotkey and run script that trigger this event (keypress --> stop capture, AutoHotkey application for example).
