OBS render & encoding lag while recording 360fps 1920x1080 with 3060 rtx

So I am trying to record Minecraft in 360 fps 1920x1080 but for some reason, it's skipping frames a lot and it's hard to record clips I do have gamemode off, and I have the latest NVIDIA GeForce drivers, OBS in admin, Also here are my obs settings. But can someone help me with this?

well my obs version is 27.0.0 and some more pc specs RAM 32 3200mhz CPU i9 10th gen
Should I use Obs 24.0.3?

You should always be using the latest revision of OBS
It's advisable to turn Game Mode on if using Windows 10 1809 and newer

CQP 15 + 360 FPS on a 1660ti ? oof.
Really no reason to set OBS to record higher than 60fps

Also, I do have task manager proof the video will be very laggy

Having the same problem here,
In this video (https://www.youtube.com/watch?v=XcHr62d8HQY) on my old pc, I could record 1080p @ 480FPS no problem.
The specs of my old PC are: Ryzen 3 1300x, GTX 970 and 8GB of 2400mhz ram.
My pc now is much better than that now (Ryzen 5 3600, RTX 3060, 16GB 3200mhz Ram.) and when I try the exact same settings, I never stop over encoding. When I turn on smooth fps in-game, it helps a little bit but still isn't perfect. In the community that we record in, high fps recordings are the way we can represent ourselves in a way.

You got the same version of video drivers ?

Considering they are very different cards, no.
In that video, I was recording off of my GTX 970. I now have an RTX 3060 and OBS will never stop over encoding.
Using the exact same recording settings, actually lowering my settings and even downscaling but that doesn't fix it.

It's not just us either. Like for some unknown reason on faster hardware, OBS just struggles to encode video recording at high fps and it's really infuriating.
