OBS recording lagging and stuttering heavily

As the title says, my recent recordings in OBS (last 2 days) all have very bad frame drops and stutters, some lasting for a few frames and some lasting for several seconds or even multiple minutes.
I've not changed any of my OBS scenes or settings (aside from adding one audio capture), and I'm recording the exact same game as always (Valorant through Game Capture).
This issue has never happened before, and I thought it was just a one-off, until it happened again today. Updating Windows and my graphics drivers (both to latest version) didn't help/fix at all.

The first log (2025-01-07) is from a recording before this issue started, and the second (25-02-01) is from after this issue started.
This probably isn't relevant, but I do record to a pretty bad external HDD with write speeds of ~8-15mbps.

Any help/suggestions would be appreciated, many thanks.

EDIT: I have noticed that the second log seems to repeat the following over and over at random intervals:
16:28:09.981: [game-capture: 'VALORANT - In-Game'] d3d11 shared texture capture successful
16:28:09.984: [game-capture: 'VALORANT - In-Game'] shared texture capture successful

Not really sure what it means, or if it's an issue with the game itself somehow, but it's the only significant difference I could spot between the two log files.
