OBS pretends like exactly half of a recording never happened

This happens approximately 1/4 times I record a video. I will take very careful note of the total time OBS has been recording before I hit the Stop Recording button, and whatever it is, my resulting recording will be exactly half of the length, and it won't be FPS morphed or anything, it will just be cut-off smack dab in the middle. Truly aggravating to set a great new record in a game and see that my video proof is basically non-existent. I've also tried exclusively using the recording hotkeys to avoid using Alt+Tab to switch between windows in case that would mess something up, but the same darn thing happens.

I attached a LOG file, but if anyone needs any extra information, please let me know. I did research this same problem on Google and came across past threads, but all of the LOG files posted in those threads seemed to indicate that the system was being overloaded, and my LOG file indicates no such thing. I believe all the relevant computer specs are included in the LOG file, and I'm certainly equipped to record 1080p 60fps. Additionally, I'm recording to a quality 7200rpm drive (a 2TB WD Gold). The drive is not the same drive I'm playing the game from and it is almost completely empty, so it has plenty of space left.

This one has really left me scratching my head.

Ah, I forgot I'd get the same old Windows 7 hocus pocus. I guarantee you this has nothing to do with an operating system (I built my computer so I'm not quite as computer-illiterate as I may seem), but it's one less problem for you, so you can feel free to delete this and go about your business.

You used ffmpeg custom output, where only limited information is gathered.
First, set Settings->Advanced->Color Format back to NV12 and color range to partial. This setting is mainly liable for your bad recording performance.
Then set Settings->Output->Output mode to simple and set recording quality to Indistinguishable quality. As encoder, use Hardware (Nvenc). These settings will give you a working setup. If you feel you need to change things, change only one thing at a time, verify the impact, and revert to the previous setting if the result is not as expected.
